I just set my bike up for the first trainer ride of the year (bleh) and was wondering what tire pressure I should inflate to. In the past years I’ve always done 100 psi, but I’m wondering if that is too much.

That’s what I use in mine. I’ve found that the trainer heats the tire more than the road (no air movement I suppose) so the pressure rise due to heat is greater than on the road, especially if you really can do a long workout. Also,using a little less pressure than you would on the road the tire puts a larger “foot print” on the drum and slips less if you do any sprint type work.
I use the same pressure as I would on the road. 110 psi, regardless. I don’t think it matters much, as long as there is “enough” pressure.
