Does anyone have a recommendation for waterproof/bluetooth headphones for swimming?
not specifically, I never use them, but I don’t believe that Bluetooth works under water.
Bluetooth has a very limited range underwater (measured in inches at best).
It’s a pretty complicated setup, but Underwater Audio has a kit that works with an Apple Watch.

A FINIS DUO MP3 player with a pair of thick band googles, say Aquasphare Kayenne are amazing. Par with ear plugs for even better sound.
