Cycling DVD’s (Spinervals or the like), books (Tour de France series, any of the good triathlon training books), gift certificates to the LBS.
You could buy them 1/3 of a Cobb V-Flow saddle. In three years they will be so happy you won’t believe it!

How about a couple of boxes of Cliff bars or whatever consumables they like? I know its not exciting, but very convenient to have over the year. The gift that keeps on giving kind of thing. Even stocking stuffers like tubes and such. Again, boring, but very nice to have when its really needed.
