I asked this question in another thread, but received no responses, figured I’d try again:
If saddles are purposefully made hard, to support “sit bones” and not contact extraneous muscle/fat, does a soft cover not negate this? Why not buy a padded saddle to begin with? Maybe there are advantages/considerations I have not read about? Thanks.
I think that the thought behind these saddle covers is:

add to an already padded saddle

retrofit a hard saddle (Think SI Flite Ti)

allow for addl padding
It is all a personal preference thing really.
A couple of things for me.
One is that in my thinner tri shorts, I could feel the stitching in my old saddle. On longer rides, that stitching would start to irritate my butt from excessive rubbing. A saddle cover is completely smooth and eliminated this problem.
Also, the additional padding is nice to make up for the difference in saddle height that occurs from switching to thinner tri shorts from thicker cycling shorts.
