If you have a mountain bike and get away from Cancun it might be okay. There’s actually a nice path along the Cancun/Chetumal highway South of Play del Carmen.
The traffic in Cancun is horrendous and you see very few people riding. I’d advise against it. As far as climbing goes, that part of the Yucatan is mostly flat, so nothing hilly to challenge you.
I’ve ridden a mountain bike around the Puerto Aventurous area, but nothing was too spectacular. Take your mask and fins instead and look at the fish.
