Recovering from mono, medical question(RBC)

So I got mono about three and a half weeks ago, felt fine after a week but my liver and spleen functions were way out of whack wich has now mostly normalized and have been given the ok to start training again at low intensities. My main problem right now is that the infection has left me slightly anemic (127 rbc normal range is 130-170).

Is there anything specifically I can do besides eat well and rest to help my body produce RBCs quicker? any supplements or specific foods I should be eating?
