I’ve searched the forum to get information on rear wheel discs; and am probably going to go with the disc cover from wheelbuilder.com option. Right now I have a Ritchey DS Pro wheelset on a Cervelo Dual. What I am not clear on from the previous discussions is how much difference it makes what wheel you put the disc covers on? Do I want to get covers for the current back wheel, or would it help to upgrade to something like a Ksyrium SSC back wheel and then get a cover made for that? I know that there is another option of getting the actual wheel built by wheelbuilder.com, but I’d have no idea of what type of wheel to build.
If it makes a difference, my focus race for this year is IM FL (first IM).
Not an expert here, but I did buy a wheel cover from Wheelbuilder. Others may have a different take, but I don’t think the particular wheel you use makes much difference outside of the weight. Not sure of the weight differences between the Ksyrium SSC and the Ritchey, but I can’t imagine they’d be THAT much different.
The purpose of the cover is to reduce drag. it will pretty much work as well as any other disk from an aerodynamic standpoint, but will still be limited as far as bearing spin and rigidity by what wheel you start with.

What wheel you put the cover on makes no difference performance-wise, aside from weight.
That said, the Ritchey hub has an inset non-driveside flange and the covers are “dished” to mate up with wheels that have the NDS flange further outboard. This may result in the center of the cover not sitting flush against the hub on that side. You can either put something in behind it to take up the space, or use a different wheel with a more “normal” hub.
On a side note, i have a brand spanking new rear wheel cover, never out of the box that was also cut for a 27mm rear wheel (like yours). i’ll sell it to you for a discount because i should be recieving a new Disk shortly. PM if interested. never even out of the shipping box from wheelbuilder.com
