The heating will denature the protein, but that’s ok.
Your digestive enzymes in the saliva and your stomach will do the same. Also, think about what happens when you cook an egg, it denatures the protein too (that’s why it gets less gooey).

from a practical standpoint, I find that stirring it in after yields a better texture and makes the bowl a lot easier to clean after. Good idea though, protein in oatmeal is a nutritionally badass meal, especially when you drizzle some flax oil on AFTER cooking (this one I am sure about)
So even if it gets denatured by the heat of the microwave, I still get the nutritional benefit of it?
