In the next few days I will be getting a bike fit and may be looking at getting new pedals. Right now I use a old pair of Looks with the red cleats 15 degree float. I am wondering if a pair of pedals with adjustable float would be a better than using the pedals where the float is in the cleats.
It makes no difference if the float is in the pedal or cleats. For example, Speedplay Zeros have adjustable float in the cleat, not the pedal. New pedals will have a different shoe-to-pedal distance, so may require a seat height adjustment.
If I am not mistaken, red cleats have 7 degrees of float not 15. There is a difference in how systems float. A system like Look, or Shimano, use spring tension in their float. So the cleat always wants to go back to neutral. A system like Speedplay uses a spring for engagement, not for float. So the cleat will stay where it is put.
