Looking for info on good and safe places to run, swim and to take spinning classes around Westchester County, NY

What part of Westchester?
Club Fit - two locations: Jefferson Valley and Briarcliff.
Run - Rockefeller Park
Swim - Pools, really. You need to go into Putnam county to swim good open water, IMO.
Actually my wife is the one who’s looking for those places. I know she’d love open water swim, since she’s a good swimmer. Workplace is in Purchase and home is Bronxville. Bike-less for now, and for about 10 more days, without car as well.

SUNY Purchase has pretty good pool hours. I swam with Badger Masters when I was there, but there are very fast, at least relative to the triathlon world (1:15-1:20 interval base / 100yd). But I am sure the pool has more hours than 5:30-7:00AM. 
There is great riding in that area as well. You can open water swim at Rye Town Beach, I think. That is where the swim is for Westchester Triathlon. You are also pretty close to the open water swim areas in CT - Weed Beach in Darien and Calf Pasture Beach in somewhere-I-forget. That is really where I’d swim.
Down that way, I’d go into Altheus to check out their indoor cycling options. Or any of the NYSC in White Plains for traditional Spinning.
Running around those parts I don’t know too well, sorry. But I know there is a paved bike path along the SawMill that you can pick up in White Plains.
