I don’t know, I was told a two piece was '70’s. These (mostly) guys are not really up on tri fashion. Wear what you will feel comfortable in. I should edit this to add they said that about it from a picture of me wearing it. Imagine!
I wear two-piece. Only. First, if you need to use the toilet at any point (prior to the race, as I’m sure you all just pee on the bike), then the onesie requires almost a complete wardrobe change.
And, I think the one-piece suits just look a little gay.
I race with a two piece from Zoot in the summer. I like to have free range of motion and no extra fabric to give me extra heat.
In the Spring I wear a one piece (like a bathing suit) same thing, but my belly is covered (otherwise I get cold on the bike). I also put my number in the front (if allowed by the race) so that it shields me from the wind until I warm up and dry up.
It depends on how you tolerate heat and what you’re used to. It’s easy enough to experiment while training - I know it would be funny to climb Palomar on a Saturday morning in briefs and top, but if you get hot in shorts and a jersey in conditions similar to the race site, then you know you can opt for less clothing and viceversa.
I have read that the shark skin and other suits reduce drag/are more aero because they are smoother than skin. Notice that for the TT in the tour, the riders wear the long suits and even wear lycra shoe covers, but don’t really know much about it.

I wear a one piece for sprint’s and olympic distance races when I know I wont have to hit the porta potty. Trying to put a 1 piece back on sopping wet with sweat is a real chore. It just doesn’t work. That being said, it is perfect for shorter races and helps hold my gut in earlier in the year when I haven’t quite got to race weight yet. Over all I would say a 1 piece is more comfortable becasue there is no waist band cutting into my gut/love handles/etc. It also works well when wetsuits aren’t allowed.
For 1/2’s and IM distance I go with the two piece. Sooner or later the porta potty is going to come into play. Even if you pee on the bike it is hard to get through the run with out at least one stop. If you do run into GI issues it really helps to be able to get the bottoms down and up in a timely manner.
