I am an over 230 lb rider. Which of these wheelsets is best suited for me?
At 230 pounds, I would go with a heavy rim (Velocity Deep V, Mavic CXP30, tandem rims, etc.) with 36 spokes. You will probably have problems with broken spokes and keeping the wheels true on the wheels you mentioned. If you really need/want a pre-built wheel, I would look around for some old Mavic Classics Elite wheels. They are sturdier than the other wheels and best of all - they’re all black!
