Making sense of stem angles?

I consider myself fairly quick on the uptake, but I find myself a little stumped on figuring out stem angles…

This is for a road bike(Orbea). I switched from a Deda Newton 110cm(82 degree) to a Thomson Elite X2 130mm(+/- 10 degree??). Could the Newton 82 degree also be referred to as a +/- 8 degree?? I know that these angles are based on a 90 degree w/ the headtube, but there seem to be many variations.

What I was trying to accomplish was a longer cockpit…maybe 2cm. But by going to the 130cm w/ the different rise it is the right length but too much drop(saddle to bar), or if I flip it over the drop is not so bad, but the reach comer back to where I was w/ the Newton 110??

Any easy way to understand this stuff??
