Just curious, sounds like you’ve got a pretty good handle on things. Have you looked at any of the glycemic load tables to get some ideas? I found that a bit enlightening too.

Fruit and beans are low-carb?
Low carb to many and low carb to a diabetic are two different things :-)** **Pop is high carb, fruit is low carb for most. Pop is death, fruit is insulin to a diabetic.
A couple days after we got out of the hospital and we were still learning about how the insulin reacts, overlaps etc etc we were at the ice rink and my son dropped low. I was thinking that pop would be the perfect choice to bring him back up. So I bought one from the vending machine. We were told 15-20g of carbs to bring him back up, about 1/3-1/2 can of pop. That day I learned there’s a HUGE difference between types of carbs and how quickly they get into the blood stream. It brought him up alright ![]()

Some of the snacks we kept on hand and the kids brought in as Type 1s were things like a small slice of ham or turkey rolled up with cream cheese (full fat), cheese sticks, beef sticks, berries (they are quite low on the glycemic index). Another thing that one little soccer player brought in were packaged green beans that were like chips.
I get that your wife is vegan, but the reality is that most of the things that will be good for your boy are going to be animal protein sources just because of the availability and preparation options.
Oh, and hummus is fine, it is made from legumes, not beans. You can also make your own almond butter or peanut butter sans sugar. Just throw the nuts in a food processor and turn it on until the nuts come together into a butter. You can use a little olive oil to thin it if you need to.

Legumes are a food classification that includes beans; all beans are legumes. Hummus is made from garbanzo beans (chickpeas), which have a better proportion of protein/carb (for diabetics) than most beans, but it is still 1/3.

Diabetic is easy to live with. My son is also T1D and eats what ever he wants, when ever he wants (and lots of it!)

I am not sure how this would affect him, but, I take the low carb tortillas, spray them with a dash of olive oil, sprinkle some garlic salt or mrs. dash on them, and then bake them for 10 minutes. I let them cool and then cut them into chips. I use the mission carb balance flour tortillas and they have 3 grams of fat, 19 grams of carbs (of which it says that 13 grams of fiber) and 5 grams of protein. Does the type of carb affect him? I would think so (which means that this suggestion is probably useless) but I don’t know.
I like as a snack pepperoni and mozorella cheese.
If the lo carb tortillas work, how about a wrap with pepperoni, mozorella cheese, and olive oil and balsamic vinegar?
How about slices of cucumbers dipped in ranch dressing (high in fat) or homemade dip using plain greek yogurt (high in fat/protein) with powder ranch dressing mix or dill?
Also, I know that Target sells flavored nuts. Stuff like coconut lime cashews and bbq mixed nuts.
