There’s one episode of CSI Las Vegas where a suspect says he’s training for a Triathlon. Can’t remember exactly which one though.
The only thing that comes to mind are roadie movies.

Not a movie, but there was a LAw & Order episode where a female motivational speaker was killed. She was a triathlete and a winner of the “Big Island Hawaii Triathlon.”
Not a movie, but Grand Theft Auto San Andreas Video Game has a Triathlon in it. You get to navigate the main caracter in it.
Demi Moore in that awful movie that is the same as Top Gun and Days of Thunder, called GI Jane, was mentioned as a triathlete when they examine her dossier.

Interestingly, the events were swim, run and then Magnum chased down the bad guy on his Sears 10-speed.
I seem to recall that in “Arachnophobia”, a spry old woman told her doctor (Bill Pullman?) that she felt healthy enough to do a triathlon. Naturally, she died of a spider bite.
Also, in the English Dubbed version of “Akira” when Kaneda is being interrogated by the police he talked about his grandmother and the interrogator sharply replied something like “I suppose she’ll try a triathlon now”. In the Japanese subtitled version he actually said something about climbng some mountain.
We are at an impass folks. Tri’s need more coverage in the movies. Any producers out there?

There was an old episode of ‘Remington Steele’ where Laura competed in an unnamed Los Angelse area triathlon. From tvtome.com’s description of the episode:
"Laura is assaulted while running in a triathlon after a desperate woman switches numbers with her. "
comments on the episode:

Classic stuff and great research but we’re still limited with movies. In real life I know Tom Cruise did all or part of a race. I don’t know if he was trying to save the world though!
I think they only stage races on TV shows…Last year they had a triathlon on “Average Joe”. The winner was awarded the date with the hottie. Funny to watch those non-athletic “joes” compete.
Honestly, I feel ashamed for watching that show in the first place:-)
