I’ve been puzzling over this one. No pro goes to the extra effort without a reason. Who knows?
Ideas:
Comfort, did the collar rub the neck the wrong way?
Heat, was it cooler?
Aero, was it more aero?
Another reason?
They didn’t seem to do this to their team/trade jerseys so I’m left wondering.
I do have some off the shelf jerseys that could be more comfortable, cooler or more aero (the collar might prevent the jersey from conforming to the shoulders). Is doing away with the collar helpful?

It looks like it’s just for comfort. I only looked at Egan. It looks like he is simply trying to get that jersey close to the Castelli jersey he wears.

From memory, Alaphillipe who was in the yellow jersey most of the time did it the most. I don’t think he did it on his first day; yet, after that I noticed and wondered what was up.
Agreed. I think the key thing to notice is that on the lower cut yellow jerseys, they still retain the “LCL” logos that are now around the collar bone are instead of on the collar.
