Zipp 303 or if you want to save a few bucks then the Zipp 302.
Another vote for Zipp 303 or a similar, wide, ~45mm deep aero wheel with disc brakes. Roval CLX 50 would be a good choice too.

So I have 4 bikes and only 2 wheels for all of them? Crikey, what a sad state of affairs…
404’s for me. I ride them for everything except mtb year around, including training. I have 2 sets. One set with at least 30k miles on them. I’ve re-spoked them once, but they have been bullet proof and I’ve hit some really nasty stuff with them. I’m not that concerned with the weight and they are manageable in pretty high winds. I have a set of 30mm aluminum zipp 101’s also, but probably put less then 500 miles on them in the last couple years. The 404’s aren’t great in the rain/wet (still on rim brakes), but good enough that I don’t bother swapping wheels and pads. Just a solid wheel for training, road race, crits, TT w/ disc cover on rear, gravel, etc. I assume there are probably cheaper options with similar performance these days, but I feel like I’ve gotten my $'s worth out of the Zipps trust them.
303s since you mentioned gravel. 404 for road exclusive use.

I’m with you. Hed Jet 4 or 6 depending on your preference and what most of your riding is biased too.
Enve 4.5ar. Have em and they seem to be able to do just about anything, including mtn biking.
