I have a 30 gram tube of vittoria mastik. How many (new, completely clean) wheels/tires can I glue with it?

One, if done properly. See photos and article in the current Velonews about what happens if not done properly. Ouch.
Depends upon the tire. Tufos have a very absorbent base tape that sucks up glue. I use one to two (for Tufo) per wheel. Two thin coats on the rim, and one pass fully covering the base tape, then a last pass on the rim.
Also, tubulars can come off in crashes or slides even if glued properly. They were going over 45 miles per hour when they started falling.
