Hit me with some solid vitamix recipes please

My mom is loaning me her vitamix for a month while she’s in Fla. I’m looking for taste tested recipes to promote overall health with an endurance athlete emphasis. I imagine beets will be involved. What do you got??? Thanks

Tomatoes, basil, garlic, olive oil, salt pepper. Throw it in the Vitamix and blend until hot.

breakfast - simple… fuel… makes full pitcher, and lasts me through lunch…
a) 10 bananas, 10 dates +/-, water
b) 10 bananas and add a bit of grape juice, water
c) orange, 5 bananas, two mangos, an apple.
d) kids fav. apple pie… 3 apples 2 bananas few drops vanilla and little cinnamon

Throw in a good handful of spinach leaves, your choice of fruits and some water, and blend. The color is odd, but the fruits take out any taste of the spinach. I start it at level 4 speed, then go to 7 and let it run for 30 sec.

Here is a beet recipe that is pretty good:
Beets (peeled and quartered)
Apples
Ginger
Add water for desired consistency.

This is one of my favorite Vitamix recipes. It’s great eaten alone as a side/salsa or added to oatmeal. It will keep in the fridge for a few days

Apple Salsa/Chunky Applesauce
Almonds- blend first until chopped consistency
Add in the following ingredients to the almond mixture. Blend until chunky. This can turn into applesauce quickly if you aren’t watching closely.
4 medium cold apples cored and quartered. *Apples must be cold for the recipe to work. *
Juice of 1/2 lemon

For the low carbers:

1 qt buttermilk
1 peeled cucumber or with skin if organic
2 tbs curry powder/spice
scallions
salt/pepper

Makes about 5 cups.

Blend & chill. Filling and tastes great.

It’s from the Clean Program by Dr. Alejandro Junger. I’m currently on day 4 of the 3 week cleanse that this guy promotes. Fairly easy and very healthy cleanse to do. I would suggest reading his book “Clean” to get more info.

Cba I like spinach (frozen cube ones, cheaper and easier to get enough) more than beets even though I usually use both. Right now I’m drinking:
