Several of the shops in here in the midwest have bike maintanence classes called ‘work on your own bike night’. They staff it with mechanics who ‘help’ you do the work. There is no money in the bike wrench part of the business… at least for the lbs, they do it as a service and hope to not lose money. Check with your local shops.

Most (good) lbs’ hold workshops that teach the basics - from changing a flat, to regular tune-up stuff (adjusting derailleurs, brakes, etc). Some offer “advanced” classes that cover complete overhaul work as well (rebuilding bottom brackets, repacking headsets, wheel truing, etc). I’d caution against aggressive wheel truing on your own however, unless you have lots of money or at the very least, a good wrench looking over your shoulder. Many, many fixable wheels have been destroyed by an over-zealous owner with a $5 spoke wrench.
If you’re near an REI, they hold (free!) workshops as well. You might also want to try the local Y, and all the clubs in your area.
If you live in an area with no reasonable amenities, get yourself a good book - “Zinn and the Art of Road Bike Maintenance” is a title that comes highly recommended by many pros and do-it-yourselfers alike. And then there’s always the Forum, Dan’s tips page, Bunny, etc. Chances are someone’s willing to help you out if you have the time to wait for a response.
