That’s only part of the beauty of the heel - superior moisture barrier for a BLT with juicy tomatoes - crust out obviously. The soft interior sucks up the juice but it doesn’t get messy on the outside. And more flavor - thanks to the Maillard reaction - delicious chemistry.
I’ve been making sourdough since Thanksgiving and always end up with fairly large “heel” that I never know what to do with. Usually give it to the dog.
Only for toast. I mostly save it as a treat for GoatDog - my neighbor’s goat that I’ve trained to be and act more like a dog.
This has always been my theory. I keep my bread in the freezer because it’s just me and I don’t eat enough bread to eat a whole loaf before it goes bad at room temperature. I think the heels also protect against freezer burn.
I rarely eat the heel.

if you don’t like the heel of the bread, do you also not like English muffins? Those are sort of like two heels of the bread.
Made me (over)think about it. But you might be onto something there.
An English muffin is rarely my first choice for a sandwich. e.g. A breakfast McMuffin vs. the same egg+ stuff on a biscuit – the biscuit is much preferred (nutritional value aside).
I’ve never thought of the bread part of an English muffin as anything special unlike choosing an everything bagel, or raisin bread. Those add a special touch.
Edit to add - a whole wheat English muffin is just terrible. You get the heel part, plus the lame taste of whole wheat.
If I’m the first one to open the bread I immediately toss the first heel into the trash.
Homemade croutons are one of life’s simplest pleasures. A good sourdough in a pan with butter and seasoning, done until they are crispy on the outside and still chewy on the inside. Yum!
Hmm. Croutons should be crispy the whole way through. The whole point of them is crunch!
That said, one of the ideas on my list of “things to develop and sell to make a fortune” is “protein croutons.” I marinated and baked tofu in small enough cubes once that it got crispy nearly all the way through and it was like little croutons.
The other edible items on this list include chocolate flavored seltzer water (they have coconut, vanilla, etc… why is no one making chocolate???), baked potato flavored gels, bacon flavored gels (I’m a vegetarian but I do think there is a market for savory gels - I recall wanting an Italian sandwich mid-70.3 once, not another fruity Gu), salt and vinegar rice cakes (apparently available in the UK), and electrolyte coffee (Liquid IV made a fortune from electrolyte cocoa this past winter).
The non-edible list is mostly products for swimmers / swimsuit designs.
