Clinchers vs. tubulars... convince me

This runs contrary to the experience I have in other tire-gluing endeavours (not tubular bike tires. I’ve never done those). I was gluing solid 3/16" rubber tires to solid aluminum wheels. When doing that we found through reasonably rigorous testing that using just enough glue to get a good strong bond but absolutely no more gave the best rolling resistance. If you slopped glue on there and used too much then the glue began to absorb energy.

I’m not clear what would be different about bike tires so that this result wouldn’t be at least similar.
