I’m planning on buying a road bike for tri training and I’m tempted to splash out a little… Any advice on how to avoid having it stolen in the first week?
I’d try not to leave it unattended for long, but might need the occasional pitstop. What are the best (bic-proof) locks?

The U-lock looks good, but how easy are they to carry on training runs? Easier than a vinyl-covered chain? I’d be looking to lock the bike up for pee/ coffee breaks. Might a good cable lock be adequate? Or are they too easy to cut?

They aren’t. Any top quality lock is going to be heavy as all hell. They sell little retractable cable locks for <5min pit stop type situations, which aren’t terribly dificult to defeat - but are better than no lock. Best case is to never leave your ride unattended. In reality, sometimes you gotta gamble a little bit with a less than ideal situation.
If you have a nice bike, get separate/additional insurance coverage for it.
