Except I eat 99% UNcured bacon.

how is bacon a processed meat? isnt it just a cut of meat? I realise I am leaving myself wide open to abuse here but as someone who once walked into a butchers shop I am pretty sure its just a cut of meat…

Most bacon is cured. If you ever watch a show on how bacon is made, it’s the curing process that I think they are using to distinguish hot dogs, etc. Bacon is often smoked (either with real or liquid smoke), cured with sodium nitrite, etc. But you can buy bacon that is made without any of these things.

Do you watch these shows on the internet while your wife runs errands?

So all week I look forward to my Saturday night treat. You can’t really appreciate how glorious a Five Guys bacon cheeseburger really is until you can’t have it whenever you want.

I picked up some great smoked goodies from the Smokehouse Restaurant in Monteagle TN on the way back from IM FL 70.3. Homemade smoked delights! Anyone going by that area, be sure to stop by, as it smells and tastes incredible, and you won’t need to take any salt tablets for a week!

My personal all time favorite and unofficial “house brand” of bacon is Niman Ranch Uncured Applewood Smoked Bacon. Nothing artificial in there.

We get the untreated stuff and flavor it ourselves, just a bit of maple syrup and liquid smoke, good stuff. We get it from the local farmers market.

Please tell me your nutritionist also restricted your intake of wonder bread?

**Ingredients:**Pork, salt, cane and maple sugars, dextrose and celery

celery is high in nitrates which is converted to nitrites in the curing process

Its a loophole around saying “sodium nitrite” as an ingredient. I suspect the nitrite levels would be even higher in a product that uses celery derived nitrates because it is difficult to measure how much you are adding.

Agree with everything you’ve indicated above, but I’ll wager that Niman has their levels of celery extract and bacteria (necessary to provide the reductase) down to a Tee.

The entire “natural” and “uncured” thing is a bit disingenuous, at best, and is a big money maker aimed at the uninformed.

Nine bucks a pound for pork belly is a bit much…I’ve never priced their bacon, but know they’re proud of their pigs.

Ah, for this application I have always just used cure #1 measured out carefully :slight_smile:

I’m guessing their production is on a large enough scale that they have their celery extract levels right. I don’t buy bacon in stores so I wasn’t aware of how much they produce.

I’ve purchased belly from Niman when I’ve been less than successful at raising my own, and wanted a sure fire quality piece of meat. Good stuff, but way $$$.
