Figured I’d be able to answer this online no problem, but searched and found nothing on this particular question.
I’m pretty sure it should work fine, but just want to confirm before I buy some components. If I use a 11-speed front and rear derailleur and chain (all Shimano 6800 to be specific) with a 10 speed cassette and 10-speed shifters, is there any problem with compatibility with this setup?
There will be problems. AFAIK, shimano changed the cable pull ratios (cable length pulled per shift) significantly with 11-speed, for both the front and the rear derailleurs.
A workaround: use the same gear you list, but use 11-speed shifters and an 11-speed cassette (with 1 cog selectively dropped out) to make it fit on a 10 speed wheel, assuming that is your issue.
Your mail problem will be an 11 spd chain wont work with 10sp cassette or 10sp chainrings.
I can’t see a problem with 11sp front & rear mechs with 10sp shifters. They may not be perfect but the movement is defined by the shifter not the mech, so as long as the limit screws are adjusted ok, it should work.
But you will need 10sp shifters, chain, cassette and chainrings.
I was freaking out a bit with 10/11 spd compatibility also as my new bike is fitted with Dura Ace 11 spd and all my old wheels are 10 spd. Didn’t really want to lose money selling my current wheels only to shell out for 11 spd versions so i found a local LBS that send my free hub bodies off to be machined (only have to take a little bit off, 1.8mm or something like that from memory). after all that slapped on an 11 spd cassette and away i went. had to twiddle with the rear derailleur adjustments abit afterwoods but shifts fine without any issues so i’m happy and definately a lot cheaper then buying new wheelsets.
One was a Zipp hub and the other a DT 240s, both shimano obviously.

The 9000 derailleurs will also work with 7900/6700 shifters but no amount of tuning will make the front work without cage rub on the chain in certain chainring/cassette combinations.

Smart solution, who did the machining for you? We just might get 'em to do some work on a couple of our wheels.
Yeah I forgot about the narrower chain going over the 10s cogs, which I presume are a bit thicker so would cause issues. If I went with a 10s chain instead but 11s derailleurs, I’m guessing I’ll have issues going the presumably narrow pulley cage on the RD. I guess I do need to go all 10 speed.
