I just got a new stem but didn't pay attention to the clamp size. It's 31.8 and I run easton attack bars. I do have shims that I can add to make it fit, but I'm wondering if it weakens that area on the bars at all, and should be avoided, or if it's fine.

Guessing yours is the Al stem mount version if it's not 31.8..a shim should be fine..won't damage anything and should distribute the load fairly evenly.
Correct. Bars are carbon 26.0 and stem is aluminum, 31.8.
If you can get the shims to line up with the stem back and the face plate (in a way that the space between the front and back lines up with the space between the shims..if that makes sense) you will not only get a balanced grip on the bars but the force on them should be evenly distributed and not pinching the carbon.
