If you're training you need a light wheel. A pair of 32 spoke Open Pros will work just fine and will not flex and will be bombproof.

wheel hitting the derailleur?
is that at all normal?
spokes hitting it?
maybe you just need to adjust the limit screw on the derailleur
anyway I am 175lbs and I sometimes ride the set of Velocite Noir 50/38 tubies. They work fine for me, no issues when climbing steep hills.

You are not heavy enough for it to be e factor. You should be able to reliably ride anything you want regardless of weight. I am 160 lbs and race/train on a 1500 gram Gigantex carbon 16/20 clincher built on American Classic hubs. I have no flex issues at all. in fact I just did a road race this past Sunday and hit just over 950 watts in the final sprint and still had no flex issues. If you are having derailleur contact then it would seem that you have a poorly built wheel. You should under no circumstances ever experience what you describe. Try borrowing a wheel from a riding buddy and test this out, I think you will find that your particular back wheel may be the actual problem.

Alchemy hubs, Alpha 340s, CX-Rays... 18f, 24r. 1180g... no problems.

Your derailer hanger is probably bend if that happens....wheels flex has little effect on ur drive train...

Another set of Stans NoTubes Alpha 340's, Alchemy Orc/Elf hubs and Sapim CX-Ray spokes (20F, 28R 2x both sides). A shade over 1200gr and absolutely zero flex under my 165lbs. Seriously, these are stiffer than my Cosmic Carbone (and I can't flex them either).

Thats what I thought at first, but it doesn't rub when I'm seated or just spinning along the flat; only if I'm out of the saddle cranking.

and it is probably the chainstays flexing not the wheel.

They are a little over $1000 depending on details. I'd recommend either 20f and 28r or 24f and 32r... to get stiffness and strength closer to optimum.

I currently have a 20mm Veloflex Corsa on the front and a 23mm GP4000S on the rear. The Stan's rims make tires wider and rounder than normal.

I had the same issue when I moved to Switzerland and put a 11-28 cassette. Just shorten your chain a bit. It will take care of the issue in a much cheaper way than a new set of wheels.
