Wheel/Tire Combination

I got a set of slightly used Reynolds Strike SLG. I'm planning on setting them up tubeless. I'm just wondering what is anyone knows what is fastest wheel/tire combination.
At the current moment I am planning on setting it up with 25mm front and rear with the newest Schwalbe Pro One TLE with the Addix Race compound. I originally was going to go with a 23/25 tire combination but Schwalbe does not produce the tires in a 23mm width.

I would use Continental GP5000 clincher tires (23mm) with latex tubes.

Any reason why I should go with latex tubes over the tubeless version? Also wouldn't the 23s be a bit on the narrow side. I measured the tyre width with 24mm Specialized S-works Turbos on it and it came out to just over 24mm wide. Would there be too much of the rim showing with 23mm on?

Clincher tires are way easier to install and remove.

A 23mm wide tire is probably the fastest for the Strike SLG rim.
