When I purchased a dedicated back wheel for my trainer bike so I didn't have to wheel swap, the big thing was to match the rear cassette. So what is it about the Kickr that makes that cassette universal?

The $1200 kickr is not universal. It is an 11 speed cassette. If you have a 9-10 speed bike you'll need to get a cassette that matches the speeds on your bike. The kickr core doesn't come with a cassette so again you purchase a cassette that matches the speeds on your bike. The snap accepts all speeds as the wheel stays on the bike and is not removed.
