Why don't the riders have some sort of button on their handlebars that when they push it it turns on the mic so they can talk to team car etc...instead of having to take a hand off, presumably push some button in their jersey while maybe taking eyes off road for a sec or two when they lower their heads. Does it come down to reliability or something? Seems safer and more efficient so what am I missing? The technology must exist.

Assuming the button on the handlebars would be wireless, probably a reliability issue. If it were wired it'd be a safety/aero problem.
I think the pros are skilled enough to handle their bikes with one handle.

Already too many buttons on their handlebars with di2, electric bottom bracket motors, etc.

These guys grab musettes, eat, drink, repair stuff on their bikes while riding at full speed in a 150 filled buch. It's their job. They're good at it.
Never heard of a crash/accident happening because a rider activated their race radios's mics....

Mic they use is not very sensitive (otherwise it would pick too much sound/noise from surroundings). So they would have to hold button on handlebars and pull mic closer to talk anyway.

They're generally super accomplished but this is how Froome took himself out. Trying a wardrobe change with no hands on a squirrely TT bike. Splat. Broken. No tour.
Asgreen crashed yesterday into a road sign while looking down to put his bottle back in the cage...Broke his bike completely in half.
