Anyone come up with a way to hold some bottles behind the Pro Stealth saddle using the built in mounting points? As far as I know they don't make a bottle mount, just mounts for race numbers and cameras. I'm sure there's a not too difficult way of doing it, but I am the least bit handy.

I wouldn’t recommend it. The bolt holes in the Pro Stealth saddle are very small and not designed to hold heavy items, instead limited to much lighter objects like race number holders, plastic mini fenders and cameras.

The supports where the rails meet the back of the saddle are great anchors for zip-tying a cage to the saddle.
