I realized I don't know much about bottom brackets and what not so I'm kinda confused on what my options are for power meter for this bike. My road bike uses spd and a 4iii power meter and I know it's not ideal but it works for me. Would I be able to switch cranksets out and add a power meter that way?

Yes, your bike is a BSA threaded shell I believe (you'll need to verify this).
If so you can buy various options of crank based powermeters from GXP to BB386.
I have a quarq dzero for sale in BB386 in the classifieds if interested ;)
