Determining best combination of cassette, crank length and chainrings

Not sure if there is an exact science to this but I am looking for the best approach to determining the ideal combination of cassette/chainrings for the Ironman Lake Placid bike course. For example, if a cyclist is able to maintain an average of XX watts/kg over the course of 112 miles on course with XX feet of elevation then 11/XX cassette and 5X/3X chainrings are best fit. My current set up is 11/28 and 52/34 with 155 crank length. I noticed this combination bottoms out quickly on descents, works well on moderately steep climbs but more difficult on very steep hills. I am comparing to previous set up of 11/32, 172.5 crank and 53/39
