Could this be switched to a standard 53/39 without any problems or would there be issues with bolt pattern etc?

It's pretty easy to find 52t rings with a 110mm bolt pattern. Shimano, FSA, SRAM all make these options. I did the same thing this past spring, but I put on Rotor Rings. Works like a charm. Just remember that you'll have to adjust the front derailleur because of the increased clearance needed with a larger ring. The options are out there and quite possible.

Last I heard 52/36 ring combos won't calibrate on quarq powermeters. They must be 50/34 if they are compact.
