Prepping for Spring - Tyre/Rim compatability question

I'm in the process of mentally prepping for spring (I know it's only autumn....) and I have a question on the compatability of tyre and rim width.
I've looked into various articles under tech, the new etrto standars, schwalbe recommendations deviating from etrto standards etc. pp. but I'm not much wiser on what to do.
To the facts:

My road bike came with Roval C38 rims.
It mentions 622x21C on the rim itself, I measured 21mm inside width and 26mm outside width.
It had 26mm Specialized Turbo tyres on the rims (with tubes)

As per the tables I found, noly, only tyres from 35 to 62mm are recommended.
I'd like to run 25mm Conti GP5000 on it (with tubes)

As per Schwalbe, they deviate from the ETRTO standard and also recommend tyres as to 25mm thin on 21mm rims (see pdf link:

Such doesn't exist for Continental.

Now my questions:
Anyone else riding a similar setup and has experience to share?



What could happen if I run to thin tyres for my rims?
Am I pushing my luck, running 25mm tyres on 21mm rims?
What about the "aeroness" on the above combination (21mm inner width, 26mm outer width rims with 25mm tyre)?




If that all has been answered elsewhere, happy if you could please direct me to the source as I also couldn't find anything in the forum

You can use any size tires that you want.
