Best turkey leftover ideas

So we have 3 people and the smallest turkey at the store was 16 pounds...

trash can, well, that is for the whole carcass before anyone cuts into it. hmm, seems i hate turkey :)

I saw a recipe online for leftover turkey sliders that looked pretty good and simple enough for me to make.

Hawaiian slider buns
Leftover turkey on each
Dollop of cranberry sauce
Quarter slice provolone cheese
Top buns with another quarter slice provolone cheese
Bake 20-25 @ 350

Caveats apply in that i haven't tried this yet, but the final result looked delicious in the video. We also eat a lot of sliders in my house, so may be biased.

One of my favorites as a kid was my mom’s turkey tetrazzini. I have no idea how she made it, but basically chicken tetrazzini with turkey instead of chicken. I’d guess any chicken tetrazzini recipe that you like would work,

One time I used it to make chicken and rice, except it was smoked turkey and rice. The smoked turkey added a lot of great flavor

Turkey poutine: homemade fries, cheese curds ( or mozzarella if you aren't canadian and cant get curds) , leftover stuffing, turkey , smothered in turkey gravy made from the carcass, best leftover dinner ever , you are welcome

Mother always would do a turkey pie: all the turkey, gravy, and veggies thrown together, topped with a bunch of biscuits.

Never had it with stuffing... there was never any of that left...

i saw a mention of turkey tetrazzini a few days ago and it gave me a flashback of the worst sort. What were those fried noodle worms on top?

the best way may be to disguise it. Traditional in a vegetable soup,

or fry up the shreds and roll them into a shawarma in a wrap with hummus, garlic sauce, hot sauce, lettuce and pickled root vegetables (fancy food section). Even turkey can't mess up a good shawarma

We'll make some turkey sandwiches on Friday, then everyone is pretty much sick of Thanksgiving food and it will all go in the trash.

Throw it in a crock pot for several hours with some tomato sauce or marinara sauce or whatever you want to call it. Makes a nice pasta sauce.

Our 14 lb turkey cost $5 with all the discounts and credits for buying a ton of other crap at the store . We looked for a small one or a breast but they were all gone. We only had two people at dinner so we cut the primo slices out of the bird. Saved a few bits for the dog and cat and trash canned the main carcass with a lot of parts still attached. Me thinks next year we will just buy a chicken. I think turkey is way overrated. Now the shrimp and oyster stuffing...no way the cat or dog touch that stuff, it is pure gold.

Turkey pot pie.

Turkey sandwiches/burger with gravy.

Use the carcass for broth and make soup the following week.

Our 17 lbs turkey gave us dinner for 8, left over lunches for a week, and soup for a week after that.

Long Chile was a silly place.

We make a turkey and noodle casserole. Put the left over turkey, along with some thick noodles, copious amounts of cheese, some broth (I save the drippings from the roasting pan for this occasion) and whatever else meets our fancy. Slow cook it for the day. Very tasty and easily frozen/ reheated for the future.
