Sourdough bread, particularly rye & barley, but wheat as well, work with pastrami / Corned beef / Montreal Smoked meat

Pumpernickel rye swirl is the only acceptable bread in these situations.

Left over turkey meat should be heated in leftover gravy and served open-faced over white bread--just like Mom used to do it.

The cold sandwich is still delicious, but pales in comparison.

I like my smoked brisket (Texas style) on a hamburger bun.

Take a brisket and cure it (like you do a ham) and you get "corned beef". I still eat it on a hamburger bun, but don't really care for CB much.

Take a cured brisket and smoke it and you get pastrami. I like that. And still eat it on a hamburger bun.

But for me, why cure a brisket before you smoke it? Just smoke it for 12+ hours instead of making it into CB or pastrami.
