You could hop on the shelby bottoms greenway and ride to the cornelia fort airpark to do some laps on an old runway. If you cross the pedestrian bridge in downtown, hang an immediate right, and you'll get there.
Or you could type in Loveless Cafe on your phone and drive out there. Just past the restaurant is the beginning to the Natchez Trace. If you drive down that for a little there is a place to pull off and park your car. Great hilly road that is used heavily by cyclists. On weekends, I will see more bikes than cars out there.

The Natchez Trace Parkway is a good place to ride. There are a few places to park a car. . One of the more popular places to leave a car is the parking lot at mile marker 440. There are a few stops on the Trace that have bathrooms and water (fountains were still off last weekend but you can refill bottles in the bathroom sinks). There's not a bathroom or water at the 440 parking lot. The Garrison Creek trail-head has restrooms and is at mile marker 427.

This coming weekend? April 13-14?

The Trace- Or head down Old Del Rio or Old Natchez Trace Road and cut through Leipers Fork. Pretty ride but traffic gets wild.

My sister lives right by Cedar Hill park in north Nashville and I was there two weeks ago. Did several rides. I would not recommend riding around/through downtown. The rolling area north and northwest of the city was great. I did a loop east out to the superspeedway and it was okay but pretty flat and traffic was busy. The roads around Beaman park were good. I would do a ride from Percy Warner park and head southwest, do the trace or any of the roads around there, they're mostly good for riding.
Nashville has no idea what a bike route is. There'll be a bike sign posted as a bike route on a 55 mph road with no shoulder, only one lane, and rumble strips right on the edge of the highway and a steep ditch. WTH. So, stick to the rural roads. The drivers were courteous and paying attention. Way better than MN drivers.

I'd argue that they are more fun on a 'cross bike at this point. At least until some obstacles are added. But yeah, they are cool. I also hear there's a crit at the park every year, which sounds like it would be a fun (but hard) course.
