I`ve read that the Conti 5000’s are a bit narrower than the 4000 when mounted on certain rims. My 23 mm Conti 4000’s mounted on Zipp firecrest 404’s fit perfect on my 2014 P3 and measure almost 25mm mounted. Should I stick with 23’s on the new 5000’s or move to a 25mm ? Anyone have experience with the new 5000's on a P3 ?

For training? Racing? 23mm.
Tire size will also depend on wheels and rim width. Ideally uou want the tire to match the width of your time.
For longer races and for training I have been using 23mm front and 25mm rear Conti 4000 with Zipp 808 front and super 9 disc on my 2016 NP3 (but for my shorter A races, I went with the super fast, low resistance Vittorias) - with the 25mm Conti I occasionally got a bit of rub on the rear due to marginal clearance, so am really liking that the new 5000 is actually 1mm in narrower in practice than the old 25mm 4000 - so hopefully this will eliminate the occasional issues I had with clearance.

I use the same wheels/ tires for training and racing.
Roughly speaking you want measured inflated tire width to be no more than 105% of brake track width per Flo or Josh at Silca, can’t remember the author of the study. 99% chance those rims want 23mm or narrower specced tires. If you’re set on the GP5k go 23mm

I think there's confusion with the 105%. The rule of thumb is that the rim (at its widest) should be at least 105% of the tyre width, to optimise aero. This approximates with the '95% of rim width' rule for tyres if you look at it the other way.
In any case, as you say: a 404 FC rim (current version max 25mm) would be well paired with a measured 23mm tyre.
