I just picked up a Cervelo P3 (the aluminum version) and would like to use my HED Jet 6's (a little over 27 mm at its widest). Does anyone have any experience with wider wheels/tires on this frame?

I have a P3-SL. I have NOT tried anything wider than 23c Corsa Speeds.
All I can say is there isn't much clearance to the top of the fork. I got rubbing when I had just a small amount of mud get between the fork and tire.
Same with side clearance to the chain stays. Just having the wheel slightly off kilter in the dropouts causes tire rub.
