Super bike vs non super bike: cockpit

Something I've noticed...on super bikes, cockpits seem to be somewhat inline with the headtube/fork. When looking at the bike from the side, the basebar and cups generally seem to sit right on top of the head tube. But on a non super bike with a traditional stem (like what I have) the basebar and cups generally seem to be out in front of the head tube.

What's behind this? Am I mistaken and I just happen to see bikes where that is the case, or is there more there?

The photos you're seeing are more about marketing than function. The location of the pads relative to the top tube is driven by rider fit. In the case of my Speed Concept (a superbike) the riser I use puts my pads ~30mm above the top tube. Rather than define a superbike I think we can just provide a list (which will likely be argued):
