looking for a bike good for noodling around on bike paths

I'd sort of like to pick up a bike pretty much for casual bike path rides, little trips to a coffee shop type thing, maybe I could ride it off a curb if I just felt like it. Anybody ran across bikes you like for that? Some stuff I was knocking around was a cheap 29er hardtail I could put slicks on, a hybrid, or even a folding bike like REI has. Ideally not expensive, maybe $300-500ish. No merlin newsboys unfortunately.

Is your area relatively flat? If so, i midfat single speed would be a cool bike. You could pretty much ride it in any weather and on any surface. A SS bike has very few components, so they require almost no maintenance or tuning whatsoever.

My wife and I have a Specialized Roll and a Rockhopper as our "other" bikes---depending on your mood, either <$500 bike are great. The Roll is great if you're back is sore/tired/etc from long rides on the TT bike...the Rockhopper is good for moderate MTB use, yet still functions pretty well on bike paths.

I agree with the single speed idea. I would like to build a cross single speed.

Here is what I did.

Walked into LBS.
Me: "I want to buy a bike"
Scott: "High end components?" "What's your budget?"
Me: "No, whatever components you have, less than $250"

Walked out with this bike a month later for far less. (I have a pretty good relationship with my LBS)
New and used parts.
