Longer Seatpost?
Just bought a new bike, Ridley Fenix carbon size M, 57cm. I'm 6'3" with long legs and alligator arms, hence the smaller size. Also rocking 200-ish lbs.

My fitting indicated a seat height of 806mm, and the max is 813 on this size bike. Given that I'm likely going to fiddle around with the seat height and setback over time, would it be better/safer with a longer seatpost to allow some more fitting flexibility while adding to the stability of the seatpost/seat-tube junction?

Absolutely yes.

Given your body size, a too short seatpost will overstress the end of the seat tube and possibly the seat tube junction. Not a good idea.
