Been riding those for a year in 38C. GREAT TIRE.
Pretty fast on pavement, but if you did a lot of riding with roadies I'd probably go with 32.

I'm on my second set now, 32s. The last pair were 28s. About 90% of my miles are road, but have used them for some fairly technical trails too. Not the bast for loose, gravelly turns though.

32mm is a pretty solid all-arounder. Mounts easy, durable, rolls reasonably well on road, drop a few psi and it’s good off-road. It does seem to lose a bit of air overnight but that’s a minor thing.

Two weekends ago I did a Grasshopper with a lot of up/down that’s all pavement but abysmal in many places, with that on back and 30c Pro One up front. I’ll likely swap out the front for Fish Rock, which has more climbing and 25 miles of dirt roads.
