I have shimano hubbed race wheels (all my other bikes are shimano). Am I able to use that wheel with a camy rear derailer and cog set. Or can I use a shimano cog set with a campy rear derailer...

Wheels Manufacturing makes a conversion set of cogs and spacers that lets you use Shimano wheels with Campy 10 speed deraillers.

If you are on 9 speed they will work fine together - 10 speed you need the Wheels MFG cogs as was posted.

10 speed dura ace works fine with 10 speed Campy.
