I use a true flying mount, even in Ironman races through sprints. I've mastered them because I got tired of the "hurry up and stop" at the mount like everyone was doing and wanted to get the heck away from those "stoppers" as quickly as possible. Makes life a lot easier and safter. Just don't land wrong on your junk, it hurts. You have to sorta squeeze your butt cheeks tight as your butt is hitting the seat. Timing is everything!

That’s why you don’t land on your arse/junk, you land on your upper inner thigh, THEN slide fully onto the saddle.
If you tried your method in a CX race where you have to do multiple flying mounts, you would inevitably crush your junk, possibly multiple times.
That wouldn’t be much fun.

If you're doing it proper, there should be a 0.01% risk of TP (testicular pain)... You should be landing on the meaty part of your inner thigh and then sliding onto the seat... you get a surer landing, and no risk of TP...

Flying dismount is simple. I do it on my commuter bike all the time.
Flying mount. Not so much. Most seasons I just skip it and mount normally. Some seasons I'll really practice it but it's never really saved me much time.

Flying dismount all day everyday! ..... I did have a mishap at IMTX this year and fell flat on my face, since I was one of first AG coming in right after pros a large crowd got to witness it, still waiting for the video to turn up somewhere.

The left shoe is pretty straight forward... band from the heel loop or if your shoe has a band loop like my shoes do... use that, attach it to the rear quick release handle. The right side you have to find something that is in that area... I use my derailleur hanger.
I mount by having my shoes in the position outlined above... hop on my seat and slip my feet right into my shoes. I'll tighten my straps and dials in the first mile usually. For me pedaling on top of my shoes just smashes them and makes them harder to get into... so feet right into them and get on with it!
On thread topic I do flying mounts and dismounts... I feel like it does save a lot of time. In T1 all I have to do is dump my swim stuff, put my helmet on and go. T2 all I have to do is rack my bike, helmet off, run shoes on and I put my run belt on while I'm moving. If I don't have the fastest transition time, I'm usually within 10 seconds of the fastest... it all adds up and for me doing mostly Sprint/Olys it matters. I've lost two races this year by less than a second!

I’ve seen some interesting videos with transition carnage. I definitely don’t want to be there.
I use the Shimano spd pedals with mountain bike shoes. I can run fine in them (dare I say they are comfortable). So I just spend the 3 seconds in transition to throw them on, run with the bike and hop on (no real flying mounts here, yet), and click in with absolutely no worry. I can hit full power right at the get go with no fumbling with putting shoes on. Same with dismount. I think I can dismount faster too because I’m not worried about tearing my feet up on the pavement.
This is great for me, a beginner. But I don’t know if it will help or hinder as I move forward?

I prefer to land more centered so I don't have to adust over to the center; I can slip my feet in my shoes faster. FWIW, my transitions (provided it's not a longer race where I typically make a pottie break), are typically pro level transitions. So I'm doing something right. You don't need to necessarily land on your inner thigh, but whatever works for you I guess. Just pointed out as well that you have to be careful the when you do it my way--which I feel is slightly faster than your way.

I leave my shoes in the pedals, but don’t do the flying mount. I do fly my dismount, though. Never a major issue, but have had the one shoe I’m standing on pop out a couple of times. Have to pull to side and retrieve it.
