Hi! I am new to cycling and just purchased a 2012 Specialized Ruby with SRAM Apex 10 speed groupset and Roval 25mm light weight wheelset. I have access to Shimano 105 11 speed groupset. Should I switch it out? I'd like to keep my Roval wheels. New to the lingo so bear with me :)

SRAM Apex has worked great for me!

I don't see any reason to make the swap unless the Apex is at the end of it's life and the 105 is brand new. Both groupsets are entry level, but both are reliable and certainly good enough for a beginner. I have Sram Red 10 speed on one bike, and Sram Force on another bike. I bought a cheaper medium cage Apex rear derailuer that I occasionally throw on for mountain rides. I honestly cannot tell the difference between the Apex, Force, or Red. They all "just work," provided I have them dialed in correctly.
The crankset on that bike is Red.
It looks like you have mountain bike pedals.
