This is an unusual application: I want to try switching from clips to flats for my mountain bike and I'm struggling to find a wide "flat pedal" shoe that will fit my foot. The best solution I've hit on (I think) is to use a pair of Altras (which I run in) and a very very stiff insole (I will never run in these). Any ideas?

Carbon insoles are not cheap. I ran with these and just terrible. Basketball or football maybe, but not for running.

Wide skateboarder like soles and I think some of the BMX bike styles are pretty stiff.

Have you tried using just the altras? I suspect you'd be fine without the insole.

LOL can't help with the insole question- but huge kudos for great back door brag -"will never run in these!" Wish I could say the same for some of my MTB races... Nice one...:-)

Well.... I won't run far ;) Actually part of the reason for pursuing flats is to make putting my foot down easier. I'm fine with cornering... even aggressive cornering where I have to put one foot down... in clips. However any time I have to manual or bunnyhop over something I feel really uncomfortable in clips and and I think the lack of confidence feeds on itself to make the situation worse.

Are they Altra road or mountain shoes? Their mountain shoes have a stone guard type insole (goes under the normal insole) that is made so you feel less of rocks underneath. A quick search shows a few people dumping them off on ebay.
My apologies if you're already on mountain shoes with those stone guards and still feeling the pins. Altra Lone Peaks (waterproof) with flat pedals are my preferred winter fat bike setup.

For flat pedal mountain biking, I would recommend 5.10 shoes and a BMX style pedal. They are made specifically for biking so they might be a little stiffer (not as stiff as a road shoe, obviously). The big advantage is that the grip on the pedals is unmatched. Your feet will never come off the pedals when you don't want them to. Less pedal to shin impacts. Less feet bouncing off the pedals in bumpy terrain. I have even seen guys riding this setup keep up on our racer group rides. Former downhill world champion even goes on 100km + road rides with his 5.10s.
