First off, enjoy your stay, La Costa is awesome. Between the pool, golf and activities, I'm not sure I would ever leave (and I live just around the corner). If you do decide to exit the compound, here are some suggestions:

Swimming: Alga Norte Pool is right up the street, less than a mile away. Brand new facility built by the City of Carlsbad, they have plenty of open swim on the 25m pool and convert over to 50m a couple times a week. I think it's only $5 to swim. Also run masters programs out of there. Check out their website for hours: http://www.carlsbadca.gov/.../parks/poolhours.asp

Biking: Lots of good routes going out of that area. Elfin Forest loop is close and always a good test, the coast up to San Clemente is cool as you get to roll through Camp Pendleton just make sure to bring your drivers license to get onto the base, you can make your way over to the 56 and 78 bike paths for longer loops, or ride down to Torrey Pines for hills repeats and scenery. Not sure how long you will be at La Costa but you might want to check out Revolution Bike Shop in Solana Beach or Ride Bike Shop in Encinitas as both have large shop rides on Saturdays and some week-day rides. The Swami's ride goes out of Ride in Encinitas on Sat morning, if you are a strong rider, join the A ride and try to hang on through Levante. They also have Tues and Thurs AM rides that leave from the Starbucks about 1/4 mile from La Costa. http://www.swamis.org/rides

Running: Running the coast in Carlsbad is great. Nice long stretch of rolling hills with views of the Pacific all along the way. If you want trails, head up to the Calavera Hills Trail Loop in North Carlsbad or stay local and run the Switchbacks/Copper Creek Trail about a mile and a half east of the resort.

Also check out the Endurance House Tri Shop in Oceanside, they have something going on out of their shop every day.

Thanks for the help! As far as open water swimming, do any groups get together for this? Water temp mid June?

Endurance House in Oceanside has a Sunday morning open water swim, meet at Oceanside Pier at 7:45am. Also check out Tri Club of San Diego, they usually have open water swims throughout the week. Water temp in June is usually very nice, probably mid 60's, perfect in a full or sleeveless wetsuit.
