Best healthy/athlete focused cookbooks? Meal&snacks both.

I'm trying to spend more time in the kitchen, and eat healthier. I'm generally a picky eater, but I'm trying to broaden my palette.

I do need to lose weight, but I'm patient with that. I'd rather lose weight slowly and exercise with no worries than have to change my diet a second time once I'm lean.

Portability is key, since I'm going to try and bring my lunch to work, and I bike commute. Also looking for good bike snacks.

I have the Feed Zone & Feed Zone portables. I like and use both of them. Although not as much as I should. I hate cooking.

Racing Weight is divided up by how confident/adventurous a cook you are which can be quite handy. That said, I don't consider any of the recipes to be particularly difficult to make and feel that the easier stuff relies too much on pre-packaged/processed items.
Eta: I also realised I have the athletes palate but in the time I've owned it (3 months or so) I've never made anything from it.

If you can, check out the books at a library/bookstore before committing.

+1 for both feed zone books. The intro is super in-depth and the recipes range from 1-10 on the difficulty to prepare scale. You'll find a few favorites in each and they'll become staple meals for training.
